Bacon Breakfast Burritos

O breakfast burritos.

 

To be honest class, I was thinking of writing something overly witty and filled with exaggerated glory for my introduction of today’s recipe.  However, I am at a loss of words, I mean how could a humble man such as myself truly write praise good enough for the champion of breakfast meals, the breakfast burrito.  

I can’t, so I won’t.

 

Instead, I’m just going to move along and get down to the recipe.

 

Tips, Tricks & Suggestions

  • While making breakfast burritos can be a pretty simple process, it can also be a lengthy one.  That is why I prefer to make up as big of a batch I can make, and then freeze all of the extras. This is simply my recommendation, however, if you don’t want to have 15 breakfast burritos filling up your freezer, then simply half, or quarter the amounts for this recipe.
  • To freeze the breakfast burritos, simply wrap them in aluminum foil, place them in a large freezer bag, and then place them in the freezer.
  • In order to save yourself some time in the morning, I highly recommend that you bake the potatoes a day ahead of time.
  • When it comes to the burrito itself you have a lot of options for customization. For today’s recipe, I am going to be using bacon for the meat, as it is my favorite.  However, you can choose to use any meat that you want. Bacon, ham, and chorizo are the most common, but you can also do breakfast sausage, leftover chicken, or even make it vegetarian by substituting the meat with something like asparagus.  Remember that in your kitchen, there are no rules as far as what you can, and can not do, so get creative with it.
  • Enjoy these breakfast burritos with either our salsa roja, or salsa verde

 

 

Bacon Breakfast Burritos Recipe

 

Prep time: 1 hour

 

Cook Time: 15 to 20 minutes

 

Servings: 15 to 20 burritos

 

Ingredients

 

2 Large russet potatoes (baked & cut into inch sized chunks)

1 Green bell pepper (deseeded & diced), or two 4 oz. cans of hatch green chilies

1 medium white or yellow onion (diced)

2 ½  Dozen eggs

2 Lbs of bacon

15 to 20 Large flour tortillas

Some of your favorite salsa (or make one of our homemade salsas)

Mexican blend cheese

Neutral flavored oil (canola, or vegetable)

 

Instructions

 

  1. Prep the potatoes, bacon, and veggies:  Bake the potatoes a day ahead of time so that they are ready to go the morning that you want to make the burritos.  Next, cook up the bacon to your liking. Finely chop up the potatoes into chunks, and crush the bacon into pieces, and dice the onion and bell pepper.

 

  1. Fry up the potatoes onion, and bell pepper:  Get out a large skillet, and add about 2 tablespoons of oil in it.  Put the skillet over high heat and add the potatoes, onion, and bell pepper, stirring and cooking them until they begin to brown up.  This should take about 7 to 10 minutes. Once everything has browned up a little, take the skillet off the heat and set aside.

 

  1.  Cook the eggs:  Because we are making such a large batch of burrito filling, you will need to get out another large skillet and distribute half of the potato, onion, and bell pepper mixture to it.  **If you try to make this large of a batch in one skillet it will take forever to cook so trust me on this one**. Then in a separate bowl crack the eggs and lightly whisk them up.  Put both skillets over medium heat and distribute half of the eggs to both.  Quickly toss in a tablespoon or two of the salsa to both skillets. Mix this all together, and stir until the eggs have been cooked through. At the end distribute the bacon between both skillets, mix it in, and take both skillets off the heat. Finally, place the burrito fillings from both skillets into one large bowl, and set aside to be used in step 5.

 

  1. Heat up tortillas:  While you can heat them up individually in a skillet, I recommend that simply microwave them for a minute.  We just need them to be a little warm as it makes them more stretchy.

 

  1. Assemble the burritos:  Finally, assemble each burrito one at a time.  To do this you will first need to get out one tortilla and place it on your counter.  Next, take a couple of pinches of cheese and spread it around the center of the tortilla.  Then take a measuring cup, and scoop out a cup of the filling, placing it in the middle of the tortillas.  Follow this up with another couple pinches of cheese on top of the filling.  Finally to roll the burrito by folding in the sides and rolling.  Make sure that it is nice and snug.

 

  1. Serve & enjoy
