Agua de limon con chia is a classic agua fresca. Made with lime juice, sugar, water, and chia seeds for an unbelievably refreshing drink, and unique texture.

Spring temperatures are heating up, and Cinco de mayo is only a few weeks away.  That’s why today I want to share with you a super refreshing Mexican drink that everyone is going to love.  I’m referring to Agua de Limon con Chia!

 

What is Agua de Limon con Chia?

 

Agua de limon con chia is a classic Mexican agua fresca lit. “fresh water”.  And if you’re unfamiliar with agua frescas they are incredibly popular nonalcoholic beverages found throughout Mexico.  That can be found flavored with all sorts of ingredients from fruit juices, to flowers, or even grains/seeds.  

 

Trust me they’re absolutely wonderful!

 

As for agua de limon con chia you just need to combine lime juice “limon”, water “agua”, and sugar, with the super unique ingredient chia seeds.  Which results in a mild limeade-like taste (since chia seeds don’t really have any flavor).  But the cool part is as the chia seeds soak in the drink they hydrate and expand.  Resulting in a texture that is very similar to tiny boba pearls.  Trust me it’s like nothing you’ve ever had before!

Tips, Tricks & Suggestions

  • Sugar or Sweetener: When it comes to adding sweetness to today’s drink, feel free to use any type of sugar/sweetener that you prefer.  It doesn’t matter if it’s granulated sugar, brown sugar, stevia, honey, maple syrup, or even agave nectar.
  • Use room temperature water: While it’s not necessary, I highly recommend that you use room temperature water when making this drink.  As the sugar/sweetener will dissolve much better in it than in cold water.
  • Let the chia seeds hydrate: It is very important that you let the chia seeds soak in the liquid for long enough (roughly 30 minutes) so that they hydrate.  This will not only make them much more digestible but also give them the proper texture.  Which should be fairly chewy and almost similar to boba, just smaller.
  • Strain the lime juice: Another thing that isn’t necessary but I highly recommend is to strain the lime juice.  This will remove any pulp which often has a slightly bitter taste.
  • Storage: You can make this drink a couple of hours ahead of time and leave it in your fridge.  Just make sure to give it a stir every once in a while to unclump the chia seeds.  And if you do have any leftovers this drink will last at least 2 days if stored in your fridge.

Agua de Limon con Chia Recipe

Ingredients

 

4 Limes, plus more for garnish

6 Cups of water, room temperature

¼ Cup of sugar/sweetener, or more to taste

1 to 2 Tablespoons of chia seeds

Ice Cubes

 

Instructions

 

  1. Dissolve the sugar in the liquids: Squeeze out the juice from 4 limes (should be ½ cup) and strain it into a large pitcher.  Add the room temperature water and sugar(or sweetener of choice) to the same pitcher.  Then use a large spoon to stir these three ingredients together until the sugar/sweetener has dissolved into the liquids.all of the liquids are mixed together

 

  1. Mix in chia seeds: Keep stirring the liquid in the pitcher while slowly pouring in the chia seeds.  Stirring while adding the chia will ensure that they don’t clump up.the seeds are mixed in

 

  1. Let chia seeds soak in the liquid for at least 30 minutes so that they are hydrated.
