Limonada de Coco

I was first introduced to limonada de coco on a recent trip I made to Colombia.  It’s one of those things that after you’ve tried it you immediately ask yourself “Why isn’t this more popular?”.  Honestly, it is one of the most refreshing drinks you will ever have.  

 

The day in reference was spent like most other days during our trip to Colombia.  With my friends and I drinking and driving our way around the Quindío department.  

 

Ok.

 

I know that sounds bad, but trust me we had a designated driver!  

 

Anyways, after seeing practically all that could be seen we decided to make one last stop in the town of Buenavista.  Which if I’m being honest, it isn’t really anything to write home about.  However, where the town lacked in excitement, it completely made up for it in a town square loaded with street vendors.

 

You could find empanadas, arepas filled with cheese, grilled meats, and even some non-Colombian fare like pizzas.  It was all delicious, but the one stall that really blew me away was the one selling limonada de coco.

 

And since we’re all starting to feel the summer heat I thought this would be a great time to share my recipe for making it.

 

So what exactly is Limonada de coco?

 

Well, it’s basically a sweet and sour non-alcoholic slushy that can be found all over Colombia.  For starters, you have limonada which basically translates into lemonade.  Except that part is a little deceiving, because you actually use limes instead of lemons, so “Limeade”.  And the second part “de coco” literally means of coconut.  So put them both together and you have coconut limeade.  But enough talk, let’s get to making them!

Tips, Tricks & Suggestions

  • One of the key ingredients for making limonada de coco is cream of coconut.  Coconut milk is not a proper substitute, nor is coconut cream, both of which are completely different products.  I know it’s confusing.  So where do you find cream of coconut?  Well, it’s mostly used to make drinks, like pina colada, so you will often find it near where they sell margarita mixes, and bloody mary mixes.  In fact, you might have the best luck by looking for it in your local liquor store.  However, if you still can’t find cream of coconut you can purchase it on amazon through the link I have provided below.
  • You can add booze to your limonada de coco?  Of course you can!  In fact, it’s something that I often do.  You can either add a couple of shots to the blender to have it really mixed into the drink.  Or you can simply add some liquor to the glasses that you serve the drink in.

 

 

 

Limonada de Coco Recipe

 

Total time: 2 minutes

 

Servings: 2 tall glasses, or 4 small

 

Ingredients

 

1 15 oz can of cream of coconut

½ Cup of lime juice, should be 4 to 5 limes

4 Cups of ice

2 Tablespoons of sugar

Shaved coconut (optional)

 

Instructions

 

  1. Add the cream of coconut, lime juice, ice, and sugar to a blender.the ingredients in a blender

 

  1. Blend these ingredients until smooth.the ingredients blended up

 

  1. Pour your limonada de coco into glasses and sprinkle some shaved coconut on top.  Enjoy!the finished limonada de coco in a glass

Servings: 4 small glasses

  • blender

Ingredients

  • 1 15 oz can of cream of coconut
  • ½ Cup of lime juice should be 4 to 5 limes
  • 4 Cups of ice
  • 2 Tablespoons of sugar
  • Shaved coconut optional
