Last week my mother was cleaning out some old boxes when she stumbled upon a stash of her grandmother’s old recipes. She was absolutely ecstatic to have found them and quickly began to recount all the fond childhood memories of eating her delicious baked goods. You really should have seen her tell story after story of mouthwatering pies, fluffy biscuits, and killer cinnamon rolls. All of which were told with such fervor and detail that you could have sworn she had eaten these things yesterday. However, as we went through the pile of recipes we did come across one that my mother had no memory of, pumpkin bread.
Of course, this peaked both of our curiosities, and seeing as how it was pumpkin season we knew that we had to make this recipe. So we quickly went to the store, gathered all of the ingredients that we needed, and got to baking some homemade pumpkin bread. We stayed true to the original recipe and in the end, the pumpkin bread turned out perfect. It was moist and had just enough spiced pumpkiny flavor without being overpowering.
Tips, Tricks & Suggestions
- Swap out the wall nuts with a nut of your choice. Or if you really want to keep with the pumpkin theme swap in pepitas.
- Wrap the pumpkin bread in some cling wrap to keep it fresh and moist if you plan on making it a day or two ahead of time.
- You can easily turn this pumpkin bread into a pumpkin cake by coating the top in our recipe for powdered sugar glaze.
Pumpkin Bread Recipe
Prep time: 10 minutes
Cook time: 50 minutes
Servings: 14 slices
Ingredients
1⅔ Cups of all-purpose flour
1 Cup of Canned pumpkin
1⅓ Cup of sugar
½ Cup of chopped walnuts
⅓ Cup of butter, softened
⅓ Cup of water
2 Eggs
2 Teaspoons of pumpkin pie spice
1 Teaspoon of baking soda
¾ Teaspoon of salt
½ Teaspoon of vanilla extract
¼ Teaspoon of baking powder
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Cream the butter, sugar, and vanilla: Use either a stand mixer or hand mixer to cream together the butter sugar, and vanilla extract.
- Add the eggs, pumpkin, and water to the creamed ingredients and mix it all together to form our wet ingredients.
- Finish making the dough: Get out a large bowl and mix together the flour, salt, baking soda, baking powder, and pumpkin spice. Add this to the wet ingredients and mix everything together to make our dough. Finally, toss in the chopped walnuts and fold them into the dough.
- Grease a 9 x 5 x 3 loaf pan and pour the dough into it. Then use a spatula to smooth out the top of the dough.
- Bake the pumpkin bread: Place the pan in your oven and let it bake for 50 minutes to an hour. You will know it is done when you stick a toothpick into the bread and it comes out clean.
- Let the pumpkin bread rest for 10 minutes before removing from the pan.
- Slice up the bread for a quick breakfast or an easy dessert & enjoy!
