In our last post we made some delicious and crispy Colombian arepas. They were so good and easy to make that I whipped up another small batch to munch on the next morning.  But this time around I decided to pair the arepas with a traditional Colombian breakfast dish called huevos pericos.  And since the combination of the two is so good, I just had to share this incredibly easy recipe for making huevos pericos with you folks.
What are huevos pericos?
It is a simple dish consisting of scrambled eggs that are cooked into a sofrito made from diced tomatoes and green onions. The tomatoes and green onions not only give the eggs a delicious yet subtle flavor. But also a distinct bright red and green color, hence the translated name, parakeet eggs. Â
Tips, Tricks & Suggestions
- For the full experience make sure to serve your huevos pericos with some homemade arepas and a few slices of avocado.
- Sometimes additional ingredients like diced bell peppers, minced garlic, and fresh cilantro are added to this dish for additional flavor. So feel free to experiment a little with your huevos pericos.

Huevos Pericos Recipe
Prep time: 5 minutes
Cook time: 10 minutes
Servings: 3
Ingredients
2 Tablespoons of oil
2 Medium sized tomatoes, diced
2 to 3 Green onions, roughly chopped
6 Large eggs, lightly beaten
Salt to taste
Instructions
- Make the sofrito base: Get out a large skillet or pan and place it over medium-high heat. Pour in the oil, let it warm up for a minute, then toss in the tomatoes and green onion. Sprinkle in a pinch or two of salt and sautee these ingredients for roughly 5 minutes or until the tomatoes start to break down.
- Add the eggs: Pour the lightly beaten eggs into your pan/skillet and stir to combine with the sofrito. Continue to stir and scramble your eggs for a couple of minutes or until they are done to your liking.Â
- Taste the huevos pericos and add additional salt if needed.
- Serve immediately and enjoy!
