Huevos Pericos Recipe

Ingredients

  • 2 Tablespoons of oil
  • 2 Medium sized tomatoes diced
  • 2 to 3 Green onions roughly chopped
  • 6 Large eggs lightly beaten
  • Salt to taste

Instructions

  • Make the sofrito base: Get out a large skillet or pan and place it over medium-high heat. Pour in the oil, let it warm up for a minute, then toss in the tomatoes and green onion. Sprinkle in a pinch or two of salt and sautee these ingredients for roughly 5 minutes or until the tomatoes start to break down.
  • Add the eggs: Pour the lightly beaten eggs into your pan/skillet and stir to combine with the sofrito. Continue to stir and scramble your eggs for a couple of minutes or until they are done to your liking.
  • Taste the huevos pericos and add additional salt if needed.
  • Serve immediately and enjoy!
