Have you ever thought about what makes a great weeknight dinner recipe? Because to me, it comes down to three simple things. 1. It’s easy to make 2. It’s delicious 3. And most importantly it all comes together in minutes. And today we’re going to be making such a recipe with ground pork chili garlic noodles.
What You Need to Make Ground Pork Chili Garlic Noodles
Before we get into the recipe I want to take some time to talk about the main ingredients for this dish. And in particular how you can tweak each of these ingredients for yourself. So let’s get to it!
Ground Pork
I love using ground pork in this dish because it’s full of flavor, readily available, and cheap! That being said you can easily swap out the ground pork with either ground beef, ground chicken, and even ground turkey if you prefer. Or if you’re not a big fan of meat just leave it out entirely and just add in a little more vegetables.
Chili & Garlic
Obviously, a lot of the flavor in this dish comes from a heavy use of chili flakes and garlic. And as for the garlic, there’s really nothing to say other than feel free to adjust the amounts to your personal preference. But when it comes to the chili flakes you need to be careful in what you use. You see, I like to use Korean chili pepper flakes a.k.a. Gochugaru. Mainly because it doesn’t include the seeds which makes it full of chili flavor without a killer amount of heat. So if you can find gochugaru please use it.
If you can’t then you can still make something similar with regular dried whole chilies like chile de arbol. Just cut each dried chili in half and shake them to remove all of the internal seeds. Then grind them into a fine flake with either a motor and pestle or spice grinder.
Noodles
Probably my favorite aspect of this dish is the fact that any type of noodle or pasta will work. That’s right, it doesn’t matter if it’s soba noodles, chow mein noodles, or spaghetti noodles. In fact today I’m opting for some fettucini. So please use whatever type of noodle/pasta you like or whatever you just happen to have on hand.

Ground Pork Chili Garlic Noodles Recipe
Prep time: 15 minutes
Cook time: 10 minutes
Servings: 2
Ingredients
150 grams of noodles or pasta
For the Sauce:
1 Tablespoon of soy sauce
1 Tablespoon of oyster sauce
½ Tablespoon of mirin (sweet cooking wine)
1 Teaspoon of toasted sesame oil
For the rest of the dish:
3 Tablespoons of oil
3 to 4 cloves of garlic, minced
1 Tablespoon of gochugaru (Korean chili pepper flakes)
⅓ Lb of ground pork
1 Cup of cabbage, cut into strips
1 Medium carrot, julienned
Handful of bean sprouts
2 to 3 Green onions, cut into 1-inch sized pieces
Instructions
- Make the sauce: Add the ingredients for the sauce into a glass or bowl. Then use a spoon, fork, or whisk to stir them together until thoroughly combined.
- Get a pot of salted water up to a boil and cook your pasta/noodles until done to your liking.
- Sautee aromatics: Once the pasta has roughly 5 minutes of cooking time left, place the 3 tablespoons of oil into a wok or large pan/skillet. Place this over high heat and toss in the minced garlic and chili pepper flakes. Sautee these aromatic ingredients for 30 seconds or until the garlic just starts to turn golden in color.
- Add the ground pork to the wok/pan/skillet and break it up into fine crumbs. Sautee the pork with the aromatic ingredients for 3 to 4 minutes or until cooked through.
- Finish the dish: At this point, the pasta should be done cooking so take it off the heat. Then use either a spider or spaghetti server to transfer the pasta from the water and into your wok/pan/skillet Next add a splash (roughly 1 to 2 Tablespoons of the pasta water to your wok/pan/skillet along with the cabbage, carrot, and sauce. Stir fry everything for a minute or two while the sauce comes to a boil. Finally, toss in the bean sprouts and green onion and continue to stir fry for another 30 seconds then take everything off the heat.
- Serve the ground pork chili garlic noodles on a plate and enjoy!
