Creamy Mashed Potatoes

I know I say this every time I post a potato-based recipe, but my family absolutely LOVES potatoes.  Maybe it has to do with the Irish blood flowing through our veins or maybe it’s just the simple fact that potatoes can be made into a multitude of different dishes.  And trust me, we make it all. Whether it be french fries, parsley potatoes, scalloped potatoes, or baked potato soup, you name it, we’ve done it. But sometimes the best potato dishes or the simplest ones.  That’s why today we are going to show you our foolproof method for making the best creamy mashed potatoes you’ve ever eaten. So if you’re ready then let’s get to it.

 

Tips, Tricks & Suggestions

  • Today we are going to be using russet potatoes, which in my opinion are simply the best potatoes to use in a mash.  However, you can use red potatoes or even Yukon gold if that’s what you fancy.
  • Some people use milk in their mashed potatoes, but my family prefers to use half & half.  Why? Well, it simply creates a much richer dish. That being said feel free to use just regular milk, or even skim milk to make your mashed potatoes, just understand that it might not be as creamy.
  • Since we’re on the topic of half & half/milk, one important tip that my mother always taught me was to make sure that it was warm prior to adding to the potatoes.  To do this simply place the half & half/milk in a coffee mug and microwave it for a minute. It will really help incorporate it into the potatoes better.

 

 

Creamy Mashed Potatoes Recipe

 

Prep time: 2 minutes

 

Cook Time: 45 minutes

 

Servings: 6 to 8

 

Ingredients

 

3 Lbs of Russet potatoes

1 Cup of warm half & half

1 Stick of salted butter

Salt & pepper

 

Optional:

4 oz. of cream cheese

 

Instructions

 

  1. Prep the potatoes: Begin by washing and peeling the potatoes.  Then cut them in half lengthwise followed by cutting them into 2-inch sized chunks.cutting up the peeled potatoes

 

  1. Place the potatoes into a large pot and cover them with cold water.  Add in 1 teaspoon of salt.the potatoes in a pot filled with water

 

  1. Boil the potatoes: Cover the pot and place it over high heat.  Let the potatoes boil in the pot for 30 to 40 minutes until they are easily pierced by a fork.

 

  1. Dry the potatoes: Drain the water out of the pot and return it back to the stove over high heat.  Then shake the pot for a couple of minutes so that the excess water steams off of the potatoes.drying off the potatoes  This might sound like an odd thing to do, but trust me it’s necessary.

 

  1. Mash the potatoes: Add the butter and the cream cheese (if you are using it) to the pot.  Then use a potato masher to mash the potatoes and lightly incorporate everything together.adding the butter and cream cheese, mashing it in.

 

  1. Finish the mashed potatoes: Add a quarter of the half & half to the pot and use a hand mixer to whip it in.adding the half & half  Then keep adding in more half & half while whipping the potatoes with the hand mixer until they are the consistency that you prefer.  Lastly, add in some salt & pepper to taste.the mashed potatoes after they have been whipped together

 

  1. Enjoy your creamy mashed potatoes immediately, enjoy!the finished mashed potatoes
