As I stated in a previous post, I am a little new to the whole overnight oats fad. It’s definitely something that I’m not proud to admit, but at least I’m doing my best to right that wrong. You see ever since that first recipe I have been hard at work experimenting with a lot of different flavor combinations. Some were complete failures, and others, while tasting great, were a bit too complicated to make it worth anyone’s time. Luckily mama didn’t raise a quitter and I’m glad to say that I have finally come across a couple of winners such as today’s recipe for coconut overnight oats.
Tips, Tricks, & Suggestions
- Along with the shaved coconut I like to top these coconut overnight oats with something that provides some crunch such as nuts or granola.
- Today’s recipe is for one serving. However, you can always make more by doubling, tripling, or quadrupling the ingredients.
- These coconut overnight oats will last up to three days in your fridge.
- If you aren’t a fan of cold oatmeal then don’t fret. You can always heat up these oats by nuking them in the microwave for about a minute.

Coconut Overnight Oats Recipe
Total Time: 3 to 24 hours
Servings: 1
Ingredients
½ Cup of rolled oats
¾ Cup of coconut milk
1 Tablespoon of chia seeds
1 to 2 Tablespoons of maple syrup
¼ Teaspoon of vanilla extract
Toppings:
Coconut flakes
Slivered almonds
Fruit
Instructions
- Add all of the ingredients (sans topping) into a bowl or jar. Then stir them up and let them sit covered in your fridge for at least 3 hours, or overnight.
- Take the coconut overnight oats out of the fridge and top it with coconut flakes and any additional toppings that you prefer. Enjoy!
