I don’t know about your family, but mine loves pork chops. I mean, I honestly can’t recall the last time we went a week without at least one meal that featured pork chops. However, in spite of our love for the majestic pork chop (that’s right I called pork chops majestic), and the fact that everyone in the family loves to cook, we have always prepared our pork chops in a very simple manner. How simple exactly? Well, basically we just sprinkle on some salt and pepper, with an occasional light dusting of paprika. Now, don’t get me wrong, as that is a great way to prepare pork chops, but it’s also, well, sort of boring. That’s why one day I decided to pull us out of the monotony of plain pork chops and attempt to make something with a little more flair. And what I came up with ladies and gentlemen, was chipotle lime pork chops
Now, I want to be clear that I didn’t invent chipotle lime pork chops. I was simply a guy looking for a new way to make pork chops, and I happened to have some limes and a can of chipotle peppers lying around. And after getting some inspiration from other similar recipes online, I eventually developed today’s recipe. It’s a marinade that combines the flavors of not only chipotles and limes, but also garlic, cumin, oregano, and honey. The end result is a pork chop that is juicy and filled with a ton of balanced flavor. Not too hot, not too salty, not too sweet. Chipotle Lime Pork Chops Recipe
Prep time: 35 minutes
Cook time: 10 to 16 minutes
Serving: 4
Ingredients
4 Pork chops (preferably bone-in)
1 7oz. Can of Chipotle peppers in adobo
3 Cloves of garlic
2 Teaspoons of dried oregano
2 Teaspoons of salt
1 Teaspoon of cumin powder
1 Teaspoon of honey
The juice of 4 limes
Instructions
- Make the marinade: Slice open and remove the seeds from the chipotle peppers, unless you want it really spicy, then leave them in. Then add them along with the garlic, oregano, salt, cumin, honey, and lime juice to a food processor, or blender. Process these ingredients until they form a thick and uniform liquid.
- Marinade the pork chops: In either a gallon plastic bag or a walled tray, add the marinade to the pork chops and let them sit for 30 to 45 minutes.
- Preheat grill to 375 degrees Fahrenheit
- Grill The chops: Place each pork chop on the preheated grill, and let them cook on the first side for 5 to 7 minutes. Then flip the pork chops and let them cook on the other side for the same amount of time. The cooking time can increase or decrease depending on whether your pork chops are rather thick, or thin. The ones I am using are about half an inch thick. Once they are done simply take them off the grill and let the rest for 5 to 10 minutes.
