Make the marinade: Slice open and remove the seeds from the chipotle peppers, unless you want it really spicy, then leave them in. Then add them along with the garlic, oregano, salt, cumin, honey, and lime juice to a food processor, or blender. Process these ingredients until they form a thick and uniform liquid.
Marinade the pork chops: In either a gallon plastic bag, or a walled tray, add the marinade to the pork chops and let them sit for 30 to 45 minutes.
Preheat grill to 375 degrees Fahrenheit
Grill The chops: Place each pork chop on the preheated grill, and let them cook on the first side for 5 to 7 minutes. Then flip the pork chops and let them cook on the other side for the same amount of time. The cooking time can increase or decrease depending on whether your pork chops are rather thick, or thin. The ones I am using are about half an inch thick. Once they are done simply take them off the grill and let the rest for 5 to 10 minutes.
