Tips, Tricks & Suggestions

  • What type of oats should you use?:  When it comes to any type of oatmeal I always recommend that you stick with rolled a.k.a “old fashioned” oats.  They only take 5 minutes to cook compared to the 30 to 40 minutes needed for steel-cut oats or whole groats.  And sure instant oats are a little bit quicker to make (about 1 minute).  But they tend to result in an oatmeal that’s somewhat mushy, while rolled oats still have a nice chewy texture to them.  
  • Topping the oatmeal: Today’s recipe should be enough to fill you up in the morning.  But if you want a little bit extra you can always top it off.  For example, you could sprinkle on more nuts, raisins, or other types of dried fruit.  Or if you want more protein you can add a dollop or two of greek yogurt/skyr.  
  • Storage: This carrot cake oatmeal stores well in the fridge.  As long as it’s left in a container with a tight-fitting lid it should last at least 4 days.  So feel free to make an extra batch or two.  Then leave them in the fridge to have for breakfast throughout the week.  However, be aware that the oatmeal will most likely thicken up as it sits in the fridge.  So you might want to add a splash of milk or water to help thin it out before reheating and eating it.

Carrot Cake Oatmeal Recipe

Ingredients

 

½ Cup of finely shredded carrot, or roughly 1 medium sized carrot

1¼ Cup of milk, milk alternative, or water

½ Cup of rolled oats

¼ Cup of raisins 

¼ Cup of walnuts, roughly chopped

Pinch of salt

1 Teaspoon of cinnamon

¼ Teaspoon of ground nutmeg (optional)

¼ Teaspoon of ground ginger (optional)

1 Tablespoon of brown sugar

½ Teaspoon of vanilla extract (optional)

 

Instructions

 

  1. Par-cook the carrots: Add the shredded carrot and milk/water to a medium sized pot.  Place this over medium high heat and let the liquid come to a simmer.  This is so the carrots cook slightly and soften.the carrots and milk are in a pot

 

  1. Add the remaining ingredients except for the vanilla extract to the same pot and stir everything together.

 

  1. Cook the oats: Reduce the heat to medium and let the liquid return to a simmer.  Cook the oatmeal for 5 minutes making sure to stir the pot often.  You will know that the oatmeal is done when it has become nice and thick, and the oats are tender.the oats are cooked and thickened

 

  1. Add the vanilla extract and stir it into the oatmeal.

 

  1. Serve the carrot cake oatmeal in a bowl and enjoy!the finished carrot cake oatmeal
