Par-cook the carrots: Add the shredded carrot and milk/water to a medium sized pot. Place this over medium high heat and let the liquid come to a simmer. This is so the carrots cook slightly and soften.
Add the remaining ingredients except for the vanilla extract to the same pot and stir everything together.
Cook the oats: Reduce the heat to medium and let the liquid return to a simmer. Cook the oatmeal for 5 minutes making sure to stir the pot often. You will know that the oatmeal is done when it has become nice and thick, and the oats are tender.
Add the vanilla extract and stir it into the oatmeal.
Serve the carrot cake oatmeal in a bowl and enjoy!
