Corn Fritters

For most people Summertime is all about grilling meats, eating fresh fruits, or downing refreshing lemonade.  But for me, it’s all about one thing, corn.  Maybe it’s because growing up my family served it with practically every meal.  Or more likely it’s the simple fact that sweet corn can only really be purchased during the summer.  

 

Either way summer = corn. 

 

Now typically I like to keep it simple and do the basic corn on the cob with butter.  But today I want to share a special way to prepare that fresh summer corn harvest.  I’m talking about delicious corn fritters.

 

 

What are fritters?

 

Per the dictionary, a fritter is “a piece of fruit, meat, or vegetables that is coated in batter and fried”.  And while that sounds like a pretty broad definition, that’s really all it is.  You simply take an ingredient, cut it up unto small pieces, coat it in a batter, and then fry it until it is nice a golden.  

 

It’s simple, cheap, quick, and most importantly tasty.

Tips, Tricks & Suggestions

  • Obviously, since it’s still summer, today we will be using fresh corn cut right off the cob.  That being said you can just as easily use frozen kernels of corn or even canned corn for this recipe.  Just make sure that they are defrosted if using frozen, or strained if using canned.

Corn Fritters Recipe

 

Prep time: 10 minutes

 

Cook time: 10 minutes

 

Servings: 9 to 12

 

Ingredients

 

Dry ingredients:

3 Cups of corn kernels

4 to 6 green onions, minced

1 Jalapeno, deseeded and minced

1 Cup of cheddar cheese

1 Cup of flour

1 Teaspoon of baking soda

1 Teaspoon of salt

½ Teaspoon of black pepper

½ Teaspoon of chili powder

¼ Teaspoon of garlic powder

 

Wet ingredients:

2 Eggs, beaten

¼ Cup of milk

 

Neutral flavored oil for frying

 

Instructions

 

  1. Mix together the dry ingredients:  Get out a large bowl and add the flour, salt, pepper, chili powder, garlic powder, and baking powder to it.  Use a whisk to incorporate all of these ingredients together.the dry ingredients mixed together  Then toss in the corn, green onions, jalapeno, and cheddar cheese.  Mix these ingredients together with a wooden spoon until everything is coated with the flour and spice mixture.the corn, cheese, green onions, and jalapenos to the dry ingredients.

 

  1. Finnish making the batter: Pour in the beaten eggs and milk to the large bowl.  Then use the wooden spoon to mix everything together until a batter has formed and there are no visibly dry ingredients left.the fritters ready to be fried

 

  1. Fry the fritters: Get out either a large pan or skillet and pour enough oil into it until it covers the bottom with a thin layer, about ⅛ of an inch.  Place this over high heat until the oil begins to shimmer.  Then use either a spoon or better yet an ice cream scoop to scoop up some of the uncooked fritter.  Plop this into the hot pan, and flatten the ball with either the spoon or ice cream scoop so that the fritter is flat.  Continue this process until the pan/skillet is filled.  However, make sure that you don’t overcrowd the pan!the corn fritters cooking on one side  Let the fritters cook for 2 to 3 minutes on the one side and then use a spatula to carefully flip them over.they are flipped over  Let them cook on the other side for another 2 to 3 minutes and then transfer them to a plate lined with paper towels.  Continue this process until all of the fritter batter is cooked.

 

  1. Eat the corn fritters while they are still hot and crunchy, enjoy!the finished corn fritters
