Ingredients

Dry ingredients:

  • 3 Cups of corn kernels
  • 4 to 6 green onions minced
  • 1 Jalapeno deseeded and minced
  • 1 Cup of cheddar cheese
  • 1 Cup of flour
  • 1 Teaspoon of baking soda
  • 1 Teaspoon of salt
  • ½ Teaspoon of black pepper
  • ½ Teaspoon of chili powder
  • ¼ Teaspoon of garlic powder

Wet ingredients:

  • 2 Eggs beaten
  • ¼ Cup of milk
  • Neutral flavored oil for frying

Instructions

  • Mix together the dry ingredients: Get out a large bowl and add the flour, salt, pepper, chili powder, garlic powder, and baking powder to it. Use a whisk to incorporate all of these ingredients together. Then toss in the corn, green onions, jalapeno, and cheddar cheese. Mix these ingredients together with a wooden spoon until everything is coated with the flour and spice mixture.
  • Finnish making the batter: Pour in the beaten eggs and milk to the large bowl. Then use the wooden spoon to mix everything together until a batter has formed and there are no visibly dry ingredients left.
  • Fry the fritters: Get out either a large pan or skillet and pour enough oil into it until it covers the bottom with a thin layer, about ⅛ of an inch. Place this over high heat until the oil begins to shimmer. Then use either a spoon or better yet an ice cream scoop to scoop up some of the uncooked fritter. Plop this into the hot pan, squish it down with the spoon or scoop so that it’s flat, and continue this process until the pan/skillet is filled. However, make sure that you don’t overcrowd the pan! Let the fritters cook for 2 to 3 minutes on the one side and then use a spatula to carefully flip them over. Let them cook on the other side for another 2 to 3 minutes and then transfer them to a plate lined with paper towels. Continue this process until all of the fritter batter is cooked.
  • Eat the corn fritters while they are still hot and crunchy, enjoy!
