Blue Cheese Dressing

After making last week’s southern cornbread recipe I ran into the recurring problem of having too much leftover buttermilk.  It’s something that’s always ticked me off because you only really need a cup of buttermilk for most recipes, yet typically you can’t purchase it in any size smaller than a quart.  Sure I could have doubled down and made more cornbread, but I for one like a little bit a variety in my life. Luckily this is a problem no more as I recently come across a brilliant way to use up that leftover buttermilk, blue cheese dressing.

 

That’s right, apparently one of the main ingredients used to make blue cheese dressing is in fact buttermilk.  And coming from a family that loves a nice chunky blue cheese dressing this revelation was nothing short of a godsend.  

 

But the good news doesn’t stop there.  You see after trying out a couple of recipes and tweaking a few things I can confidently say that this is the best damn blue cheese dressing my family has ever tasted.  It’s balanced, yet full of flavor, and works perfectly on salads, or used as a dip. So if you’re looking for a way to use up your leftover buttermilk, or just want a great blue cheese dressing, then give this one a shot.  I guarantee you and your family/friends will love every last drop!

 

Tips, Tricks, & Suggestions

  • When it comes to which blue cheese to use I always recommend that you just go with something of good quality and that you like.  Just make sure that the blue cheese isn’t too soft or otherwise it will be difficult to crumble up.
  • This blue cheese dressing will stay good in your fridge for at least a couple of weeks.  However, I doubt that you will have any left after a couple of days 🙂
  • Use this blue cheese dressing to make a wedge salad by quartering iceberg lettuce, and drizzling on top with chunks of crispy bacon.
  • This is also perfect with our baked buffalo wings.

 

 

Blue Cheese Dressing Recipe

 

Total time: 2 Minutes

 

Servings: Makes roughly 2 cups

 

Ingredients

 

½ Cup of mayonnaise

½ Cup of sour cream

½ to ¾ Cup of buttermilk*

¼ Teaspoon of Worcestershire sauce

½ Teaspoon of lemon juice

1 to 1 ½ Tablespoon of fresh chives, minced

½ Teaspoon of black pepper

2 to 3 Ounces of blue cheese, crumbled

 

***The amount of buttermilk you add will depend on how thick or thin you prefer your dressing.

 

Instructions

 

  1. Prepare the base: Get out a medium-sized bowl and add the ½ cup of mayonnaise and ½ cup of sour cream to it.  Then add in a ½ cup of the buttermilk and stir all of the ingredients together. If it is the consistency that you want then move to the next step, however, if it is too thick you might want to add in another ¼ cup of buttermilk.the mayo, sour cream, and buttermilk mixed together

 

  1. Finish the blue cheese dressing by adding in the remaining ingredients to the bowl and stirring them all together.the rest of the ingredients addedthe blue cheese dressing made

 

  1. Let the dressing sit in your fridge for a couple of hours before using it.the blue cheese on a wedge salad
