Piyaz (Turkish White Bean Salad) Recipe

Ingredients

  • 1 Medium red onion thinly sliced
  • 2 Teaspoons of sumac or more to taste
  • ½ Teaspoon of salt or more to taste
  • 1 15 oz. Can of cannellini beans drained & washed
  • 2 Roma tomatoes roughly chopped & seeds/membrane removed
  • 1 to 2 Tablespoons of flat-leaf parsley roughly chopped
  • Juice from 1 lemon
  • 1 Tablespoon of extra virgin olive oil
  • Black pepper to taste optional

Instructions

  • Massage onions: Add the sliced onion to a medium sized mixing bowl along with the sumac and salt. Use your hands to massage the sumac and salt into the onions. Set them aside for 10 to 15 minutes so that the onions become slightly softened.
  • Toss the salad: Add the remaining ingredients for the piyaz salad to the bowl. Use two spoons to give everything a good toss until incorporated.
  • Let it rest (optional): Place the salad in your fridge for 1 to 2 hours so that the flavors can meld together.
  • Serve the piyaz salad & enjoy!
