Make the dry rub: Get out a mortar & pestle, or a spice grinder and add the black pepper, cumin, coriander seed, and fennel seed to it. Then grind up the whole spices until they are broken yet still a little coarse. Finish the dry rub by adding the salt and paprika to these spices and mix them up with a fork or spoon.
Preheat your grill to high
Rub all of your pork chops with a liberal amount of the dry rub
Grill the pork chops: Place your pork chops on your hot grill and cook them for 4 minutes, then flip them over and let them cook for an additional 4 minutes. However, if you have a thick pork chop you will need to increase the time to 5 or 6 minutes each side.
Let your dry rubbed pork chops rest for 5 minutes before digging in!
