Dry Rubbed Pork Chops Recipe

Equipment

  • mortar & pestle, or a spice grinder

Ingredients

  • Bone-in pork chops

Dry rub 1 Tablespoon of each

  • Black pepper whole
  • Cumin whole
  • Coriander seed whole
  • Fennel seed whole
  • Salt
  • Paprika

Instructions

  • Make the dry rub: Get out a mortar & pestle, or a spice grinder and add the black pepper, cumin, coriander seed, and fennel seed to it. Then grind up the whole spices until they are broken yet still a little coarse. Finish the dry rub by adding the salt and paprika to these spices and mix them up with a fork or spoon.
  • Preheat your grill to high
  • Rub all of your pork chops with a liberal amount of the dry rub
  • Grill the pork chops: Place your pork chops on your hot grill and cook them for 4 minutes, then flip them over and let them cook for an additional 4 minutes. However, if you have a thick pork chop you will need to increase the time to 5 or 6 minutes each side.
  • Let your dry rubbed pork chops rest for 5 minutes before digging in!
