Parsley Potatoes Recipe

Ingredients

  • 1 to 1½ Lbs of small gold potatoes
  • ¼ Cup of parsley minced
  • 4 Tablespoons of salted butter sliced into pieces
  • 2 Teaspoons of salt
  • 1 Teaspoon of pepper

Instructions

  • Prep the potatoes by washing them, and cutting off any noticeable eyes/blemishes.
  • Simmer the potatoes: Put these potatoes in a pot and cover them with water. Place the pot over high heat until the water comes to a boil. Then add a teaspoon of salt, cover the pot, and reduce the heat to a simmer. Let the potatoes simmer for 20 to 30 minutes until they are fork tender.
  • Strain the potatoes through a colander and then return them to the same pot.
  • Add the butter, parsley, black pepper and remaining teaspoon of salt to the pot. Cover it and shake it up until the butter and parsley cover all of the potatoes.
  • Serve immediately and enjoy!
