Prep the potatoes by washing them, and cutting off any noticeable eyes/blemishes.
Simmer the potatoes: Put these potatoes in a pot and cover them with water. Place the pot over high heat until the water comes to a boil. Then add a teaspoon of salt, cover the pot, and reduce the heat to a simmer. Let the potatoes simmer for 20 to 30 minutes until they are fork tender.
Strain the potatoes through a colander and then return them to the same pot.
Add the butter, parsley, black pepper and remaining teaspoon of salt to the pot. Cover it and shake it up until the butter and parsley cover all of the potatoes.
Serve immediately and enjoy!
