Potatoes are a pretty big deal in my family. In fact on just about any given day, there’s probably a 75% chance that dinner will feature some form of potatoes. And we do it all, whether it’s roasted potatoes, mashed potatoes, baked potatoes, scalloped potatoes, or even french fries. If it has potatoes in it, chances are my family makes it. But if I’m being honest, all of these different ways to prepare spuds can take a back seat to my favorite potato dish of all time, parsley potatoes!
Yes, you read that right folk, parsley potatoes.
I mean, really, everyone needs to stop sleeping on parsley potatoes. It’s perfect comfort food, it can be whipped up in 30 minutes or less, and it pairs well with just about any main dish. What’s not to love about that? Nothing! So if yall are ready then let’s get to making these parsley potatoes
Tips, Tricks, & Suggestions
- While today’s recipe uses gold potatoes, you can easily sub them out with red potatoes. Just make sure that they are small baby ones. If all you have are normal-sized ones then you may need to add another 10 to 20 minutes to the simmering process.
- Try adding a little it of fresh dill for a different take on this recipe.
- I really enjoy serving these parsley potatoes with either some pork schnitzel or pan-fried walleye.
Parsley Potatoes Recipe
Prep time: 3 minutes
Cook time: 30 minutes
Servings: 4
Ingredients
1 to 1½ Lbs of small gold potatoes
¼ Cup of parsley, minced
4 Tablespoons of salted butter, sliced into pieces
2 Teaspoons of salt
1 Teaspoon of pepper
Instructions
- Prep the potatoes by washing them, and cutting off any noticeable eyes/blemishes.
- Simmer the potatoes: Put these potatoes in a pot and cover them with water. Place the pot over high heat until the water comes to a boil. Then add a teaspoon of salt, cover the pot, and reduce the heat to a simmer. Let the potatoes simmer for 20 to 30 minutes until they are fork-tender.
- Strain the potatoes through a colander and then return them to the same pot.
- Add the butter, parsley, black pepper, and remaining teaspoon of salt to the pot. Cover it and shake it up until the butter and parsley cover all of the potatoes.
- Serve immediately and enjoy!
