I got to say that today is a good day class. It’s officially springtime, which means it’s time to get focused back on the food garden. Yet before I go out and purchase some new crops to plant, I like to take the time and appreciate the many crops that come back year after year. And today’s spotlight – chives. Ooooh, how I love chives. 1. They are a perfect garnish for just about anything. 2. Growing them is extremely low maintenance. And most importantly 3. They are always the first crop to pop up during the spring.
I mean just look at this guy, that’s a ton of chives and most of the other plants haven’t even begun to budding leaves. But as Uncle Ben once told Peter Parker, “With great power comes great responsibility”. I mean we can’t just let all of those chives go to waste?!? No, instead I think it would be best if we use these chives to whip up a hot batch of cheddar chive drop biscuits.
These cheddar chive drop biscuits are insanely good. They remind me of the cheddar bay biscuits you get at red lobster, but 10 times better and without the experience of dining at Red Lobster. They’re soft, moist, and salty thanks to the cheddar cheese, and popping with oniony flavor thanks to a liberal use of minced chives. But the best part is that they can be whipped up and munched on in 20 minutes. I mean, come on what’s not to love? So if you are ready then let’s get down with some cheddar chive drop biscuits.
Tips, Tricks, & Suggestions
- Sometimes I like to change it up and add other herbs to these biscuits. Thyme, oregano, rosemary are all great suggestions.
- If you want to take these biscuits to the next level, then brush them with some melted butter right before serving them.
- While I think cheddar works best with these biscuits, you can definitely sub it out with other types of cheese. Just make sure to use a cheese that can melt well like American, Mozzarella, or Gruyere.
Cheddar Chive Drop Biscuits Recipe
Prep time: 5 Minutes
Cook time: 15 Minutes
Servings: 12 Biscuits
Ingredients
2 Cups of all purpose flour
4 ½ Teaspoons of baking powder
½ Teaspoon of salt
6 Tablespoons of cold butter, cubed
1 Cup of cheddar cheese sharp shredded
4 Tablespoons of minced chives
1 Cup of buttermilk
Optional:
Melted butter
Instructions
- Preheat your oven to 425 degrees Fahrenheit
- Make the biscuit dough: Get out a large bowl and add the flour, baking powder and salt to it. Whisk these ingredients together. Then add the cubes of butter and use either a pastry cutter or two knives to break up the butter into pea-sized chunks. Once you’ve done that add the chives and cheddar cheese. Use a spoon to incorporate these ingredients into the mixture. Finally, add the cup of buttermilk and use that same spoon to mix it in. Make sure to not over mix.
- Separate the dough into biscuits: Use a ¼ measuring cup and scoop out some of the biscuit dough. Then use a butter knife to separate the dough from the measuring cup. Flip this dough out onto a baking sheet that has been covered with either parchment paper or a silicone mat. Continue doing this until you have used up all of the dough.
- Bake em’: Add these biscuits to your oven and bake for 15 minutes, or until they have become golden brown. Then take them out and let them rest for about 5 to 10 minutes.
- Eat these biscuits as is, or make them better by spreading a little bit of melted butter over their tops. Enjoy!
