Tips, Tricks & Suggestions
- Bone-in is better: While you can go with any type of pork chop that you like for today’s recipe I highly recommend that you pick out one that’s bone-in. The two best options would be a bone-in rib chop, or a bone-in loin chop. As they will both be super tender yet have a vibrant flavor thanks to the attached bone.
- Optional brine: It’s not necessary to brine your pork chops for today’s recipe. But if you’re worried that you might end up with “dry” chops then by all means feel free to do it. The best and easiest way would be to combine 2 cups of water and 1 tablespoon of salt. Then let the chops sit in this brine for a couple of hours, and wash them off to remove any excess salt.
- Temperature for cooked pork: If you are unaware the USDA changed their recommendations for how well you should cook pork a few years back. Meaning you can safely cook your chops to as low as medium-rare, if that’s what you like. So to ensure that your chops are precisely how you want them you shouldn’t rely on time. But rather you’ll need to check their temperature with a meat thermometer. And what your looking for is 145-150℉ (Medium-Rare), 150-155℉ (Medium), 155-160℉ (Medium-Well), 160℉ (Well Done).
- Serving Suggestions: My personal favorite sides to pair with apricot glazed pork chops are some sort of potatoes (i.e. Home Fries, Mashed Potatoes, or Roasted Potatoes), and a green vegetable like Gruyere Roasted Leeks, or Shaved Brussels Sprouts. And if you really want to go all out you can even grill apricot halves.

Ingredients
3 to 4 pork chops, preferable bone-in
Salt & black pepper, to taste
Apricot glaze
¼ Cup of apricot jam
2 Tablespoons of balsamic vinegar
2 Teaspoons of water
1 Teaspoon of paprika
Instructions
- Preheat your grill to medium high and salt & pepper your pork chops to your liking.
- Make the glaze: Add all of the ingredients for the apricot glaze to a small mixing bowl. Use either a fork or a whisk to mix them all together until thoroughly combined.
- Grill the chops: Place each chop down on your hot grill and let them cook for 4 to 6 minutes (depending on how thick they are). Then flip them over, brush them with the apricot glaze, and let them cook for another 4 to 6 minutes. At this point, you will want to keep flipping the chops and brushing them with the apricot glaze every 2 minutes. You will know that the chops are done when they have become firm or have an internal temperature of at least 145℉/63℃.
- Let the apricot glazed pork chops rest for a few minutes before serving, enjoy!
