Chipotle Cream Sauce

If you have ever had a fish taco before then you have probably noticed that they are frequently accompanied by a light pink colored sauce poured over it.  Maybe you’ve eaten those tacos and said to yourself, “man that sauce is good, but what the hell is it?”. Well, to be honest, the sauce can vary from restaurant to restaurant, but more often than not it is what’s called a chipotle cream sauce.

As the name suggests, the makeup of a chipotle cream sauce is simply chipotle peppers with sour cream, but often it will include ingredients like mayo and garlic. Today I have decided to provide you folks with a simple and basic recipe for a chipotle cream sauce.  It comprises just 5 ingredients and can be wiped up in a couple of minutes. So give this recipe a try the next time you decide to make some fish tacos, or even try it on a sandwich or a burger because it tastes great on those too.

Ok, so now let’s get down to the brass tacks of this recipe.  The chipotle peppers needed for this recipe are not the dried ones that you will see hanging in your grocery store, but rather chipotle peppers in adobo.  This version of chipotle peppers come in a can and are readily available in most supermarkets.

If you’re not sure where it would be, just go to the Mexican food aisle.  So what is adobo anyway? Well, adobo is a sweet and sour sauce that not only provides an extra flavor to the recipe but also makes sure that the chilies are moist and tender, thus requiring less preparation.  Now, as for the spiciness of the sauce, that all depends on what you do with the chili seeds. If you like your food spicy then leave the seeds in, if you like it medium then only discard half of the seeds, and if you like it mild then discard all of the seeds.  That’s it, so let’s get into the recipe.

Chipotle Cream Sauce Recipe

Prep time: 5 minutes

Cook time: None

Servings: Makes a cup of the sauce

Ingredients

½ Cup of sour cream

½ Cup of mayo

2-3 Chipotle peppers in adobo (minced)

¼ Teaspoon of garlic powder

Juice of 3 to 4 limes

Instructions

  1. Mince the chipotle peppers: Take the chipotle peppers out of the can and onto a cutting board.  It is at this time that you will need to decide how spicy you want this sauce to be.  Essentially if you like it milder then you will need to slice open the chili and discard the seeds, yet if you like it spicy, then leave then in.  After you have decided simply mince up the chipotles.

  1. Mix the ingredients: Add the minced chipotle peppers, along with the sour cream, mayo, garlic powder, and lime juice to a small bowl.  Take a fork or a whisk and mix all of these ingredients together. If the sauce seems a little too thick for your liking then you can always add a splash of water to it.  Simply add a splash at a time and remix until it is the thickness you desire.

  1. Let sit: Cover this bowl, and let it sit in your refrigerator for at least a couple of hours before using so that all of the flavors have time to meld together.

  1. Serve & enjoy
